This thing is pretty great and not too bad to look at on the counter top either! Wouldn’t necessarily say it’s something you need, but it’s pretty awesome to have!

Saved my Starter!

I live in Hawaii, and really struggled with establishing and keeping starter.
The hot, humid climate resulted in mold in the traditional way of starting a starter. I then tried a combo of day in fridge, night on counter. The temp variation was not kind.
I finally broke down and bought this, amazing. I get my starter to where I think it should be, and put it in the home at 45 degrees. It keeps perfectly.
Also great since I am a weekly baker.

Helpful Product, But Limited Guidance for Different Maintenance Methods

I recently purchased the Sourdough Home in hopes that it would allow me to maintain my starter without requiring daily feedings. While I understand there is a learning curve involved, I am still working to find the optimal settings. Even at the lowest temperature setting, I am finding that my starter is maturing sooner than I would like.
My goal is to maintain a healthy starter while extending the time between feedings to approximately 4–5 days. One challenge I have encountered is that the instructions and recommendations are based on a maintenance routine that differs from the one I currently use. I initially did not think this would be an issue, but when I reach out for assistance, the guidance provided is understandably centered around their specific feeding ratios and process. As a result, it has been somewhat difficult to apply the advice directly to my own routine. (I prefer a stiff starter)
This has been a bit frustrating, as I had hoped for more tailored guidance, but I remain optimistic that with some continued experimentation, I’ll find the right settings and routine that work for my starter.
